Plant proteins as structuring elements in complex food matrices

Plant proteins are key ingredients to manufacture sustainable and nutritious food products. However, the complexity of the protein assemblies occurring in plants and the effect of extraction process have to be well mastered for the ingredients to achieve their full functionality in finished products. We will discuss examples involving pea and soy proteins for the design of liquid or texturized plant-based products.
